The Coconut Ban
Traditional curry relies on coconut milk, which is over 80% saturated fat (the kind that stiffens arteries). We swap this for a tempered Greek Yogurt emulsion. You get the same silky texture with zero saturated fat and a massive protein boost.
The "Bioavailability" Hack
Turmeric contains Curcumin, a potent anti-inflammatory. However, your body struggles to absorb it alone. We formulate this sauce with specific levels of Black Pepper (Piperine), which increases Curcumin absorption by up to 2,000%.

- 1 lb Chicken Breast, cubed
- 1 can (15oz) Chickpeas, rinsed
- 3 cups Fresh Spinach
- 1 tbsp Olive Oil
- 1 Yellow Onion, diced
The Golden Sauce
- 3/4 cup 0% Greek Yogurt (Room Temp)
- 1 cup Low Sodium Chicken Broth
- 3 cloves Garlic, minced
- 1 tbsp Fresh Ginger, grated
- 2 tsp Ground Turmeric
- 1 tsp Ground Cumin
- 1/2 tsp Black Pepper (Crucial!)
Instructions
The Sear
Heat olive oil in a deep skillet over medium-high heat. Add the cubed chicken and onion. Sauté for 5-6 minutes until the chicken is golden and the onions are translucent.
The "Bloom"
Add the garlic, ginger, turmeric, cumin, and black pepper. Stir constantly for 60 seconds.
Lipid Lab Note: Heating the spices in the oil ("blooming") releases the essential oils and makes the antioxidants more potent.
The Simmer
Pour in the chicken broth and add the rinsed chickpeas. Scrape the bottom of the pan to release any flavorful browned bits. Simmer for 5 minutes until the liquid reduces slightly.
The Temper (Don't Skip!)
Turn the heat off completely. Place your Greek yogurt in a separate bowl. Take a spoonful of the hot curry sauce from the pan and mix it into the yogurt. Repeat this 3 times.
Why?
This warms the yogurt slowly so it doesn't curdle when added to the pan.
Finish & Fold
Pour the tempered yogurt mixture back into the skillet. Add the fresh spinach and stir gently until the sauce is creamy yellow and the spinach has wilted (about 1 minute). Serve immediately.
