The Lipid Audit: Why This Works

🥥

The Coconut Ban

Traditional curry relies on coconut milk, which is over 80% saturated fat (the kind that stiffens arteries). We swap this for a tempered Greek Yogurt emulsion. You get the same silky texture with zero saturated fat and a massive protein boost.

🧪

The "Bioavailability" Hack

Turmeric contains Curcumin, a potent anti-inflammatory. However, your body struggles to absorb it alone. We formulate this sauce with specific levels of Black Pepper (Piperine), which increases Curcumin absorption by up to 2,000%.

🧽

The Soluble Sponge

We extend the meal with Chickpeas. These legumes provide the soluble fiber "matrix" needed to bind cholesterol in the gut, ensuring this meal actively lowers LDL while you eat.

The Recipe

Yields: 4 Servings Prep: 10 Mins Cook: 25 Mins

Ingredients

The Protein & Veg

  • 1 lb Chicken Breast, cubed
  • 1 can (15oz) Chickpeas, rinsed
  • 3 cups Fresh Spinach
  • 1 tbsp Olive Oil
  • 1 Yellow Onion, diced

The Golden Sauce

  • 3/4 cup 0% Greek Yogurt (Room Temp)
  • 1 cup Low Sodium Chicken Broth
  • 3 cloves Garlic, minced
  • 1 tbsp Fresh Ginger, grated
  • 2 tsp Ground Turmeric
  • 1 tsp Ground Cumin
  • 1/2 tsp Black Pepper (Crucial!)

Instructions

1

The Sear

Heat olive oil in a deep skillet over medium-high heat. Add the cubed chicken and onion. Sauté for 5-6 minutes until the chicken is golden and the onions are translucent.

2

The "Bloom"

Add the garlic, ginger, turmeric, cumin, and black pepper. Stir constantly for 60 seconds.
Lipid Lab Note: Heating the spices in the oil ("blooming") releases the essential oils and makes the antioxidants more potent.

3

The Simmer

Pour in the chicken broth and add the rinsed chickpeas. Scrape the bottom of the pan to release any flavorful browned bits. Simmer for 5 minutes until the liquid reduces slightly.

4

The Temper (Don't Skip!)

Turn the heat off completely. Place your Greek yogurt in a separate bowl. Take a spoonful of the hot curry sauce from the pan and mix it into the yogurt. Repeat this 3 times.
Why? This warms the yogurt slowly so it doesn't curdle when added to the pan.

5

Finish & Fold

Pour the tempered yogurt mixture back into the skillet. Add the fresh spinach and stir gently until the sauce is creamy yellow and the spinach has wilted (about 1 minute). Serve immediately.

🛒 The Lipidologist's Pantry

The Golden Shield
McCormick Gourmet Organic Ground Turmeric

Lipid Lab Note: We opt for Organic to ensure the root is free from soil pesticides. This is your primary defense against systemic inflammation.

The Activator
Watkins Gourmet Spice Tin, Pure Ground Black Pepper

Lipid Lab Note: Non-negotiable. The "piperine" in this pepper increases turmeric absorption by 2000%. Without it, you are just eating yellow dust.

Anti-Inflammatory
Christopher Ranch Organic Ginger

Lipid Lab Note: Contains gingerol, a bioactive compound that aids digestion and further reduces oxidative stress in the arteries.

The Cream Swap
Stonyfield Organic Greek Nonfat Yogurt (0%)

Lipid Lab Note: The secret to our sauce. 16g of protein per serving and zero saturated fat. It creates a rich mouthfeel without the "coconut cream" consequence.

Gut Health Base
Kettle & Fire Organic Chicken Broth

Lipid Lab Note: We rely on K&F for their clean ingredient decks. No hidden inflammatory oils or excessive sodium—just pure broth.

The Sear
Graza "Sizzle" Extra Virgin Olive Oil

Lipid Lab Note: Formulated for heat. This Picual olive oil retains its high polyphenol count even during the sauté, protecting your LDL from oxidation.

Nitrate Load
Organicgirl Baby Spinach

Lipid Lab Note: We wilt this down to volume-load the meal with Nitrates, which help dilate blood vessels and improve circulation.

The Clean Sponge
Jovial 100% Organic Chickpeas (Glass Jar)

Lipid Lab Note: We prefer Jovial because they pack in glass, not cans. This avoids BPA and can linings that can act as endocrine disruptors.

The Lean Build
Just Bare® Natural Fresh Chicken Breast

Lipid Lab Note: No antibiotics ever. This ensures we are getting pure protein to rebuild muscle without introducing unnecessary chemicals to the body.
