The LDL Audit: Why It Works
The "Butter Ban"
The package instructions for the grain blend call for a tablespoon of butter. We deleted this step. Butter is high in palmitic acid, a saturated fat that raises LDL. We replace that mouthfeel with Extra Virgin Olive Oil later in the process.
The Greek Yogurt "Risotto" Hack
To get a creamy, comforting texture, most recipes rely on heavy cream or cheese. We use 0% Non-fat Greek Yogurt added *off the heat*. It mimics the richness of cream but provides protein instead of artery-clogging fat.
The Kale Volume Trick
We don't just use kale for color; we use a massive bunch. When you wilt kale down with lemon juice, you can pack 4 cups of greens into a single skillet. This provides a dense matrix of fiber to bind to cholesterol in the digestive tract.
The Recipe
Ingredients
The Base & Protein
- 1 bag Trader Joe’s Harvest Blend (approx 2.5 cups dry)
- 3.5 cups Low-Sodium Chicken Broth (or water)
- 1 lb Raw Chicken Breast Tenders, cut into chunks
- 1 large bunch Kale, stems removed & chopped
The Flavor & Cream
- 2 tbsp Extra Virgin Olive Oil (divided)
- ½ cup Non-fat (0%) Plain Greek Yogurt
- 3 cloves Garlic, minced
- ½ Fresh Lemon (juice)
- 1 tsp Dried Oregano
Instructions
The "Clean" Boil
Bring broth to a boil. Add the Harvest Blend.
Crucial Step:
Do NOT add the butter listed on the package instructions. We are saving our fat allowance for healthy olive oil later.
Reduce heat, cover, and simmer for 10 minutes until absorbed. Set aside.
Season & Sear
Toss chicken pieces with black pepper and oregano. Heat 1 tbsp olive oil in a deep skillet over medium-high heat. Add chicken and cook until golden brown (about 5-6 mins).
Add the minced garlic in the last 60 seconds so it becomes fragrant but doesn't burn.
Wilt & Brighten
Lower heat to medium. Add remaining 1 tbsp olive oil if needed. Pile the kale on top of the chicken and immediately squeeze the lemon juice over the greens.
Chemistry Note: The acid from the lemon breaks down the tough cell walls of the kale, making it tender without overcooking it.
The Mix & Cream
Pour the cooked grains into the skillet and toss to combine. Turn off the heat completely. Stir in the Greek Yogurt until the mixture is creamy and coats the grains. Serve immediately topped with fresh herbs.
