We are huge fans of Monique Volz at Ambitious Kitchen. Her original Turkey Chili recipe is legendary for a reason—it has perfect texture and spice.
However, for those of us managing ApoB and LDL, standard toppings like sour cream and tortilla chips add unnecessary saturated fat and processed carbs.
The HeartHealth Twist: We remove the chips entirely and swap the sour cream for Fage Total 0% Greek Yogurt. It has the exact same tang and creaminess, but with zero fat and added protein.
Ingredients
- 1 lb Extra Lean Ground Turkey (99% Fat Free)
- 1 Yellow Onion & 1 Red Bell Pepper (Chopped)
- 2 cans (15oz) Dark Red Kidney Beans (Rinsed)
- 1 can (15oz) Sweet Corn (Rinsed)
- 1 can (28oz) Crushed Tomatoes
- 1.5 cups Chicken Broth (Low Sodium)
- Spices: Chili Powder (2 tbsp), Cumin (2 tsp), Oregano (1 tsp), Cayenne (dash)
The HeartHealth Toppings:
- Nonfat Greek Yogurt (Plain)
- Fresh Avocado (Monounsaturated Fat)
- Fresh Cilantro
Instructions
- 1 Sauté: Heat 2 tsp olive oil in a large pot. Add onion, garlic, and pepper. Cook 5-7 mins.
- 2 Brown: Add the turkey. Break it up and cook until no longer pink. Stir in spices (Chili powder, Cumin, Oregano, Cayenne, Salt).
- 3 Simmer: Add tomatoes, broth, beans, and corn. Bring to a boil, then reduce heat to low. Simmer uncovered for 30-45 mins until thick.
- 4 Serve: Ladle into bowls. Top immediately with a large dollop of cold Greek Yogurt and avocado.
